After preparing and eating my staid single-egg omelette this morning, I found myself looking for more. It was possible to be adventurous since the winter nip was in the air and the kitchen was at my feet (that is, until Queenie got up.)
Solo in the kitchen, smelling the spices, and cracking the egg, I was thinking of Delhi. It is 9 degrees out there now.
Playing the guitar for a Christmas choir this evening, I was picturing the Christmas choirs putting up their performances in the city. Listen to the choir of the Delhi School of Music, Chanakya Puri where I learned classical guitar. And this is the Sacred Heart cathedral, Gole da khana decked up for Christmas.

Somehow I felt like sitting by Mrs. Ahuja's warm kitchen in Okhla, and being fed parathas made by her hand when I was working for CUP. The curd was incidental. I was a paying guest with Mrs. Ahuja for several years before I moved to my rented barsati (room on the terrace) in Sheikh Sarai.
I could not make the parathas but a carton of Frugart curd was staring at me from the fridge here in Goa. I decided to dunk a bit of it into my second omlette. Who would know? So after spreading the batter in the pan I did just that.
A used half-cube of Amul cheese too went the same way after being diced to bits. I added chopped coriander,chopped onions, chopped chillies, and chopped tomatoes to the 2-egg mix. For spices I used black pepper, cayenne pepper, turmeric, and salt to taste.
The omelette with curd tasted delicious. A first for me. Curd made it light and fluffy and easy to digest. Looking forward to more recipes with curd.
