There is always something to discover in Panjim. Today we stepped into the head post office on MG road. When I asked a man behind counter number 1 some information, I noticed he was totally blind in both eyes. Still, he answered all my queries crisply and amiably. I admired the staff who treated him as one of their own, as competent as them. 

We picked up the famed chicken xacuti of Portuguese antecedents from Ashok bar and restaurant round the corner. Fresh undo, poee, and pao have been bought for dinner. 

There is a shop selling organic stuff like grains, teas, soaps, and free range eggs down the road . It reminded me of Auroville in Pondicherry. 

Omelette
Handmade paper booklets were available next door, including several clothes and bags. It also had pottery work. 

The day began with promise. I made an omelette which tasted good. It even had Dwayne asking for more. The game changer was placing the batter on a hot frying pan. I tried to visualize how the ros omelette is made on carts in Mapusa. The flame is always high. 

I also rubbed in the saffron, salt, coriander, chillies, onions, tomatoes, and slivers of garlic well. Queenie's style. The omelette was fried in olive oil.
