Poricha Muttai Masala

Scrambled egg masala (Tamil Nadu)

Made this today for Sunday breakfast. Turned out very well. I was drawn by the fact that the eggs are beaten and scrambled and set aside. The masalas are then woven in with the onions, tomato, ginger-garlic combo. But first the sputter of jeera and curry leaves from our balcony garden. A dash of coriander powder, tumeric, Kashmiri chilli powder. pepper powder, and cumin powder - and you really get going. The flavours are so tempting. Red chillies for colour and sugar for mischief. A wedge of butter for taste, garnished with lime and fresh coriander and you're through. The video of the recipe is in Tamil, but the instructions are in English. 😂Tastes great with chapatis.
